Most chef's knives have blades that are 6, 8 or ten inches extended. Although a 10-inch knife can absolutely chop, cut and prepare most any food item, its size can be daunting to some cooks. Kitchen knifes with 8-inch blades typically are preferred, as they can get most of the kitchen tasks done and their size is quite manageable.
